Sauvignon Blanc/Pedro Ximenez

This Chilean white is a blend of Sauvignon Blanc and … wait for it… Pedro Ximenez. The same PX that’s used in sherry to make super sweet wines, but here it gives a weight and a mineral saltiness to the Sauvignon Blanc. It’s produced in the northern part of Chile, a place where the ocean breezes cool the vineyards to the extent that the wines are much more European in style. Zesty with lemon and plenty of sweet pink grapefruit, so typical of Chilean SB only with the acidity tempered by the PX. There’s a lovely lemon sherbet/slight salinity on the finish.
